Brew Day –
Everything went very smooth. Turned out to be a beautiful day. Perfect brewing weather.
Efficiency went crazy though. Pre boil gravity was around 1.056 (what FG was supposed to be). I ended up adding 1 gallon of water just before boil.
Chill got below 80˚.
OG = 1.055 – NAILED IT!
Collected a bit over 8.5 gallons. With starter just over 9 gallons in fermenter. By Saturday evening a very strong bubble in airlock.
Thursday Sept. 24
Racked to secondary. Gravity = 1.013 – lower than calculated. Sample tastes great. Hoppy but not overly bitter. Really excited for this one.
