Double brew day at Rob’s. Rob brewed his Mosaic SMaSH. I brewed a 10 gallon Amarillo Wheat which would eventually sit on 10 pounds of organic cranberries from Maryland. Let’s get this out of the way now. TOO MUCH CRANBERRY. WAY too much.
- 10 lbs. Pilsner
- 10 lbs. White Wheat
- 2 lbs. Flaked Wheat
- 1 lb. Red Wheat
- 1 lb. Crystal 60
- 1 lb. Rice Hulls
- 1.5 oz. Amarillo leaf 10.9% – 60 mins.
- 1 oz. Amarillo leaf 10.9% – 30 mins.
- .5 oz. Amarillo leaf 10.9% – Flame out
- Wyeast 1056 – American Ale
- OG – 1.050
- FG – 1.01
- IBU – 31
- SRM – 5.5
- ABV – 5.2
Mash in – 7.5 gal at 130˚
Step temp – 122˚ actual temp = 125˚ Hold for 30 mins.
Heat mash to 152˚ over 15 mins.
Step temp – 152˚ actual temp = 152˚ Hold for 45 mins.
Heat mash to 168˚ over 10 mins.
Step temp = 168˚ actual temp = 170˚ Hold for 10 mins.
Add 2 gallons heated spare water to tun for foundation water.
Transfer mash to tun.
Sparge water to 200˚.
Vorlauf – 10 mins.
Collect 14 gallons.
Add 1.5 oz Amarillo leaf 10.9%
Add 1 oz. Amarillo leaf 10.9% at 30 mins.
Chiller and Irish Moss at 10 mins.
Add .5 oz. Amarillo leaf 10.9% at flame out.
Chill using pump, chiller and recirculate for whirlpool.
Whirlpool failed. Will not whirlpool properly with immersion chiller and what little it did just forced hopes to build up on bazooka screen. pain in the ass bazooka screen.
Transferred using pump.
OG = 1.054
Oxygenate and pitch yeast.
Load fermenter in Tom’s truck for ride home.
Cranberries from Maryland finally showed up. 10 lbs.
Cooked down with a little water in 2 pots. Busted the berries open as much as possible. After cooling, added to sanitized fermenter and racked beer from primary. Can already tell it was too much cranberry. Should have strained some out.
Racked to tertiary to get beer off of berries and let clear up a few days.
Now that is a PINK beer. Looks like Hawaiian Punch.
April 30 ish ??
Transferred to 2 kegs.
Not sure how to feel about this beer. Is definitely better cold and carbonated. Still, way too much cranberry.
FG = 1.010 – ABV = 5.7%
Took 1 keg to Kyle’s Bug Boil. Told the guys to serve small samples of this beer so people will not feel bad pouring it out. Almost everyone immediately handed their cups back and said “fill it up”. This was the first keg of the night to kick. I am dumbfounded!!!
Will take the 2nd keg to the Piasa Palisades Group of the Sierra Club Craft Beer Fundraiser on June 25th. Will also enter in the home brew competition.
